Quinoa is a superfood that has been used for centuries–first, by the ancient Incan civilizations, and now by the modern-day people of Peru. It naturally grows in the high altitudes of the Andes, and it is this unique environment that gives quinoa its beneficial qualities.
Quinoa is traditionally used in breakfasts and stews, but in modern times it has been used as an excellent replacement for rice. Many exciting recipes use quinoa instead of rice, including quinoa “chaufa”, and “lomo saltado.”

HOW TO PREPARE:
Use one part quinoa with two parts water, and add a pinch of salt. Lightly wash then add the quinoa to boiling water, cook for 15 minutes over low heat. It can be used as a perfect replacement for rice, as it is nutrient-dense and gluten-free. Quinoa is an essential staple item for all families. The year we started producing superfoods, we founded Happy Little Faces, a non-profit organization that provides opportunities for impoverished children in our local community of Lima, Peru. In 2010, we built a kindergarten from scratch, providing free education, lunches, and extra-curricular activities for local children who would otherwise not have these opportunities.
